Subscription price IJFSNPH contributes to the improvement of public health through quality research and a better understanding of the science involved in food safety, nutrition and dietetics, food studies, food and restaurant management. To promote better health for all, this initiative aims to broaden the context of public health and health equity, integrate the study of these various disciplines, and foster knowledge transfer on key issues regarding the pivotal role of food safety, nutrition and health equity in influencing health outcomes. The objectives of IJFSNPH are to establish an effective channel of communication between food scientists, nutritionists, public health professionals, food producers, food marketers, policy makers, governmental and non-governmental agencies, and others concerned with the food safety, nutrition and public health dimensions.

Short communication and high quality review papers on all aspects of the science of food safety and hygiene. All received manuscripts coving the scope of the journal will be evaluated by properly competent referees. The goal of this journal is to induce a research relation and to promote study, research and the improvement of knowledge among the specialists.

J Food Prot 1 April ; 82 4 : — Food handling across the custody chain from production to consumption is one of the most important stages in which microbes can enter food from infected food handlers or due to cross-contamination. The wholesale produce market WSPM , located in Doha, Qatar, is a good example of a custody chain in which a large amount of produce from different origins are purchased daily by restaurants, retailers, and individuals. However, no information is available on the food handling practices applied at the WSPM. Hence, this study was conducted to assess the self-reported hygiene practices and food safety knowledge of produce handlers at the WSPM as a baseline for food safety outreach. One hundred twenty produce handlers participated in this study to complete a structured questionnaire assessing food safety knowledge and hygiene practices.

J Food Prot 1 January ; 66 1 : — Epidemiological data from Europe, North America, Australia, and New Zealand indicate that a substantial proportion of foodborne disease is attributable to improper food preparation practices in consumers' homes. International concern about consumer food safety has prompted considerable research to evaluate domestic food-handling practices. Focus groups and observational studies have also been used. One consumer food safety study examined the relationship between pathogenic microbial contamination from raw chicken and observed food-handling behaviors, and the results of this study indicated extensive Campylobacter cross-contamination during food preparation sessions. Limited information about consumers' attitudes and intentions with regard to safe food-handling behaviors has been obtained, although a substantial amount of information about consumer knowledge and self-reported practices is available. Observation studies suggest that substantial numbers of consumers frequently implement unsafe food-handling practices.

The primary objective of food hygiene is to eliminate or reduce the risk of exposure to foodborne illness. Microorganisms may gain access to and contaminate food through various routes including the hands of individual s preparing the food, cooking utensils, water for cooking, among others. Given the ubiquity of microorganisms and various routes of contamination of food, one can safely say that it is extremely difficult, if not impossible, to achieve total purity in terms of food contamination. In this concise review also, some common modes of microbial contamination in household kitchen as well as food safety practices will be discussed, to help educate the general public as well as reduce the incidence of foodborne illnesses within household kitchen contexts.
